Indian Spiced Cauliflower and Broccoli Tagine
This recipes is low in Saturated Fat, and very low in Cholesterol. It is also a good source of Protein, Thiamin, Riboflavin, Niacin, Vitamin B6, Pantothenic Acid, Iron, Magnesium, Phosphorus, Potassium and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Folate and Manganese.
Serves 1
1/2 onion, organic, (sliced)
1 tsp. ginger, fresh, (finely grated)
1 garlic, clove, (minced)
1 tbsp. powder, curry, organic
1/2 tsp. garam masala, organic
1/2 tsp. turmeric, ground, organic
1/4 tsp. powder, chilli, hot, organic
1/2 tsp. caraway seeds, organic
50 g celery, organic, (sliced)
100 g carrot, organic, (sliced into half moons)
40 g lentils, red, organic
1 tbsp. tomato, puree, organic
200 g pasatta, organic
1/2 cup water
80 g mushrooms, organic, (quartered)
150 g cauliflower, florets, organic, (frozen and cooked)
150 g broccoli, florets, organic, (frozen and cooked)
80 g beans, green, organic, (frozen)
Add 60 ml of water to medium sized saucepan and heat on a high heat setting (9 heat setting) until the water comes to the boil; at this point, add the onions, ginger and garlic - turning down the heat to a medium heat setting (5. heat setting). Allow to sweat for 5 minutes. Stir the mixture frequently until softened.
Add the curry powder, garam masala, turmeric, hot chilli powder, caraway seeds and toast - stirring until the spices begin to darken for about 1 minute. Next, add the celery and carrot to the saucepan and mix briefly for 1 minute before adding the red lentils, tomato puree, pasatta and water. Add the mushrooms along with the cauliflower and broccoli and bring to a gently simmer. Cover the saucepan with a lid and reduce the heat to a low heat setting (3 heat setting) and cook for 20 minutes until the vegetables are tender - stirring occasionally.
Cook the green beans in the microwave on high for 3 minutes. Slice the green beans into thirds and add to the saucepan for the last 1 minute remaining upon the cooking time. Serve.
