Salmon and Dill Open Sandwich

Salmon & dill open sandwich
This recipe is low in Sodium. It is also a good source of Vitamin C, Vitamin K, Riboflavin, Phosphorus and Potassium, and a very good source of Protein, Niacin, Vitamin B6, Vitamin B12 and Selenium.

Serves 1
1 Alaskan salmon fillet, cooked
1/4 cup minced red onion
2 tbsp. lemon juice
1/4 tsp. freshly ground pepper

4 tbsp. quark (50 g)
4 (90 g) slices super-food bread, toasted
4 slices tomato
Handful lambs lettuce

Combine salmon, onion, lemon juice and pepper in a medium bowl.
Spread 1 tbsp. quark on each of the 4 slices of bread.
Distribute 100 g salmon salad over the cream cheese on each slice of bread.
Top with 2 tomato slices and an addition of leaves.
Serve.
