Sweet Potato Toasts

Sweet Potato Toasts 
This recipe is low in Sodium, and very low in Saturated Fat and Cholesterol. It is also a good source of Dietary Fiber, Vitamin B6 and Potassium, and a very good source of Vitamin A, Vitamin C and Manganese.

Serves 1
1 potato, sweet, large, organic

Slice the sweet potato lengthwise into 1/4 inch thick slices. Place the sweet potato slices in a toaster on high for about 5 minutes or until cooked through. You may need to toast multiple times depending on the length of your toaster settings.

Serve topped with any toppings of your choice.

Notes:
Sweet potato toast slices can be stored in an airtight glass container for up to 1 week.
