Apple Butter
This recipe is very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Dietary Fiber and Manganese.
Serves 4
60 ml water
1/2 lemon, organic, (juiced)
2 apples, organic, (peeled, sliced)
8 dates, soft, pitted, organic
1/2 tsp. cinnamon, ground
Add the apples to a glass measuring jug with 60 ml of water and transfer to the microwave; microwave on high for 3 minutes. Mix briefly with a spoon before returning to the microwave for a further 3 minutes on high. Remove from the microwave and add the remaining ingredients to the glass measuring jug in the order listed.
Using a hand blender, blend the mixture until a smooth consistency is obtained. If the resulting mixture seems too watery, pour this mixture into a small saucepan and heat on a low heat (heat setting 3.) until it has thickened to the desired consistency.
Pour into a sterilised jar. Label and date using a permanent marker and store in the fridge. Use as required.
Notes:
Storing: Alternatively, you can sterilise the jars through a short cycle on your dishwasher.
Further alchemical developments to consider applying to the recipe;
Use retained frozen apple cores as the substitute for the 2 apples the recipe calls for (300 g) | 'Super-food bread | EX.' (150 g) | 'Buckwheat seed bread | EX.' (150 g) | 'Chia seed crisp bread crackers | EX.' (4)
