Courgette Spaghetti

Courgette Spaghetti
This recipe is low in Saturated Fat and Sodium, and very low in Cholesterol. It is also a good source of Protein, Vitamin A, Thiamin, Niacin, Phosphorus and Copper, and a very good source of Dietary Fiber, Vitamin C, Vitamin K, Riboflavin, Vitamin B6, Folate, Magnesium, Potassium and Manganese.

Serves 1
1 courgette, organic

Using a mandolin slicer, run the courgette on all four sides across the mandoline slicer with the julienne plate attached. Use your fingers to separate the strands from each other. Place onto a microwavable plate and transfer into the microwave. Heat on a high heat setting for 2 minutes until softened. Remove from the microwave and serve immediately with whichever dish you choose.
