Celebration Lentil Loaf

Celebration Lentil Loaf 
This recipe is low in Sodium, and very low in Saturated Fat and Cholesterol. It is also a good source of Protein, Iron, Phosphorus and Copper, and a very good source of Dietary Fiber, Vitamin C, Folate and Manganese.

Serves 16
1 cup lentils, brown, organic, (rinsed)
3/4 cup bulgur wheat, organic
8 oz. mushrooms, organic, (sliced)
1 onion, organic, (chopped)
2/3 cup Vinegar, apple cider, organic
1 stock cube, chicken, organic
1/4 tsp. salt, pink, himalayan, organic
3/4 cup buckwheat, flakes, organic
1 pepper, red, fresh, organic, (finely sliced)
1/4 cup parsley, fresh, organic, (chopped)

Put the lentils in a medium saucepan with 2 cups of water and bring to a boil over a high heat (heat setting 9). Cover and simmer (heat setting 3.) until the lentils are very tender, about 40 minutes.

Drain well and set aside. Put the bulgur wheat in a medium saucepan with 1 1/2 cup water and bring to a boil over a high heat (heat setting 9). Cover and simmer (heat setting 3.) until the bulgur wheat is tender and water is absorbed - about 15 minutes. Set aside.

In a medium saucepan, combine mushrooms, onion, vinegar, stock and salt. Cover and simmer over a medium heat (heat setting 5.) until the vegetables are very tender - about 15 minutes. Transfer to a food processor and pulse until very finely chopped. Scrape into a bowl and fold in lentils, bulgur, buckwheat flakes, pepper and parsley.

Preheat the oven to 200'C.

Line the bottom and sides of an 2 lb loaf tin with parchment paper. Pack lentil mixture firmly into pan and smooth the top. Bake until the edges brown slightly - about 1 hour. Cool in the pan for 25 minutes, and then invert it onto a serving plate. Remove the parchment lined baking sheet and bake in a 180'C oven until heated through - about 45 minutes.
